Expect this place to always be crowded but the wait moves really fast!
Food: The food here never disappoints me! Pho,Bun Bo Hue, Hu Tieu.... everything is good here. Many locations so you can always trust Pho Pasteur.
Service: Decent service for these Vietnamese people haha Wait goes by really fast and the food comes out really fast.

Food: I ordered four items, and two of the four was out. Soup flavor was blend, my bun no hue soup doesn't even taste like bun no hue. Springs I order was poorly wrapped. It was very loose, once I bite on it, food was falling out.
Service: my server was helpful in telling me what's out, he spoke English, that was a plus!

Came here on a recommendation of a friend who said it's one of the most authentic Vietnamese restaurants in the area.
Saturday late morning, they weren't that busy, but still had a good number of customers. We were seated immediately and it didn't take long for someone to come take our order.
The food came out as soon as it was ready which means we got our food separately. I ordered beef so it probably took a little longer than the Pho.
The food was pretty good and truly was better than the average Pho restaurant. The Pho looked like it was plentiful rather than just broth with some veggies/meat. The beef was excellent, well cooked and seasoned just right for my taste.
As the crowd thinned out, it appeared to be more employees than customers, but that made for the speedy service. We weren't rushed out or anything, but we did have to go to the counter with our table number to pay.

I didn't think that pork would be the best part of my pho meal today, but deliciousness often finds a way.
Pho Pasteur Hien Vuong is a surprisingly-crowded-despite-its-Yelp-rating restaurant in the busy Mall of Fortune. You can literally walk through a door to reach 85°C Bakery Cafe, and then it's a hop, skip, and a jump more to reach local favorite Brodard.
I would normally have pushed to eat at a more well-regarded pho establishment, but I wanted to check out a place that's new to me and I was the only one in my party who actually ate the pho. As you'll find in most Vietnamese restaurants, there are many different dishes available, not just pho.
Hot Tea (complimentary? that or $0.75): brought out pre-brewed in plastic cups. Nothing very special about the tea, just a decent palate cleanser.
Pho Xe Lua ($7.95): large combo bowl with rare steak, well-done flank, brisket, tendon, tripe, and beefball. The broth was sweet but a little lacking in depth of flavor. The noodles were fine, although I neglected to inquire whether the broader, fresh noodles were available. The meats were all reasonably flavorful and tender overall, and there was a good portion.
For some reason, the usual plate of accompaniments didn't arrive until we pointed out the lack of Thai basil in the other plates brought out for use with the other dishes; afterward, they brought out Thai basil and only Thai basil. Strange. At least it was a plentiful portion for one, and the basil was fresh.
All in all, it's not the best pho around, so I'd consider other menu options if you have to eat here. Such as...
Mi Kho ($6.95, perhaps?): house special combo w/ glazed BBQ pork, pork, shrimp, and chicken. I only tried a bit of the noodle with a piece of BBQ pork, and it was alright. However, with my mom not inclined to eat all the meat in accompanying pork bone broth, I went to town on it. There was a huge ball-and-socket bone and a ton of meat. It had so much porky flavor and could be passed off as barbeque quality if you add a little liquid smoke or something to it. Definitely worth an order if only to get a hold of the pork bone.
Bun Bo Hue: I barely tried the broth, which was unusually devoid of red coloration. It was tasty enough, but surprisingly not spicy as I've come to expect from ordering this dish at a particular San Jose Restaurant. Apparently, the idea is to allow customer-defined spice level, which is fine. I just didn't find the broth especially appealing, and I likely won't actually order it for myself on any future visits.
Find something with a pork bone broth at Pho Pasteur Hien Vuong and you'll probably leave happy - unless you're not a pork eater, in which case: why have you read all the way to this point? Thank goodness I found something enjoyable in this meal or it would've been a waste of my limited time on this trip. Or on this planet. This place food is nasty. The menu, spoons, table and condiment bottles were all super sticky. You could def taste freezer burn hamhock. The udon noodles aka banh canh looks nothing like the picture and there's no crab meat.

This place is busy on the weekends. Its inside the center next to 85 degree bakery. Since we ate late after the rush hour, it wasn't long before we got a table.
Parking: It is packed and small parking spaces because there's so many restaurants in the center
We got the Vermacilli bowl with beef and egg rolls and the Pho bowl with everything. I've had other Vermacilli, the egg rolls aren't the same taste. The beef was good and had the BBQ flavor, which I really like. My friend suggested I add basil to my Vermacilli bowl. I was hesitant to do it, but OMG! I'm so glad he told me. It made a huge difference to the taste. The basil adds freshness and basil flavor to the noodle bowl. Recommend, if you haven't tried adding basil, TRY IT!!! I ate all of my vermacilli bowl and was still hungry. Not sure if I was super hungry that day or what.
The Pho bowl wasn't good. I'm not sure but the soup had a weird taste to it. It was a little too sweet for my liking. We couldn't finish it all. I wouldn't come back to order this again.
Service: they don't come to see how you're doing or to offer to refill water. Mostly, they just come to take your order and bring you food. So if you want water, make sure when they're writing your order to ask for water.

Love this place. Solid authentic Viet food, good service, clean, and QUICK with the food! Really what more do you want from a Viet restaurant??

Went here on 1/24/16 for lunch. First things first - this place was packed on a Sunday afternoon.
I grabbed a table for 2 while Brian P. grabbed macarons at Broddards. If your party isn't there, waiters won't take a drink order, or ask you if you'd like to order anything whatsoever.
Brian finally showed up and I ordered a bowl of pho (combo 1) & an appitizer of pork rolls (A6) for us to share. Unfortunately, the food was extremely bland. The rolls tasted better the next day out of the fridge, but the pho was unsatisfying.

It's been a few years since my last review so I am going to write an updated one.
As mentioned in my last review, the pho here is pretty decent. The large bowl is pretty big and filled me up very quickly. It came with a lot of beef/meat so I was happy with that. It is decently priced at around 7-8 dollars a bowl.
My friend ordered the hainan chicken rice and I am pleasantly surprised that their rice was seasoned well! Not bad for a place that does not specialize in Hainan chicken rice.
I checked in on yelp for a free Thai tea. They told me I couldn't take it to go, but gave it to me in a to go cup anyway.
Cash only, unless your transaction is over 15 dollars.

It's a little more pricey than the other surrounding pho restaurants but it seemed worth it to me. The meat (I ordered pho tai) was good quality. It was kind of empty when I came. I think it's because Brodard is right next door, which probably steals all the customers. GIve this place a try though if you don't feel like waiting in long lines at Brodard.

This place is packed all the time. Service is fast, food comes out quick. Boyfriend and I both got pho with steak, brisket and flank. Great broth, fresh veggies but the meat cuts were horrible. The flank and brisket had ribbons of dense chewy fat, we had to pick off the pieces of meat and set the fat aside. Quite the laborious meal today, which is obviously not ideal.
For two bowls of pho and iced tea, our bill came out to be $20 with tip. Not bad, but considering how small the small size was and the amount of protein we received, there is better value to be found elsewhere.
